Have a go at making your very own Treasure Island cupcakes this Christmas!
Ingredients
250g Butter / Margarine
250g Caster sugar
1 tsp Vanilla Essence
250g Self Raising Flour
4 Eggs
Method
1. Cream together butter, sugar and vanilla until pale and fluffy
2. Beat in the eggs
3. Fold in the flour
4. Divide the mixture between 16 cake cases
5. Bake at 180 C for 16 – 20 minutes until risen and golden
6. Allow to cool before decorating
Vanilla Buttercream Icing
125g Butter, softened
500g Icing Sugar, sieved
0.5 tsp Vanilla Essence
Milk
1. Combine all the ingredients with enough milk to make a stiff but pipeable
icing and beat for 1 minute
2. Pipe on to your cooled cakes with an open star nozzle and decorate with
Pirate toppers
